Authentic Mexican Burnt Salsa


8-10 roma tomatoes
1-2 jalepenos
1 medium onion
3/4 t. lime pepper (or lemon pepper)
3/4 t. Lawry's seasoning salt
3/4 t. Lawry's garlic salt
3/4 t. salt
1 dash oregano
1/2 t. dried cilantro
1 can diced tomatoes
1/2 bunch cilantro (chopped)

Place roma tomatoes, jalepenos and onion in a frying pan on high heat. You can half the onion and depending on how hot the jalepenos are, you may want to de-vein them. Let the vegetables burn! You will want to turn them every once in a while to get a lot of the outsides nice and black. Remove from the pan and place in a bowl. Refrigerate until cool. Add remaining ingredients and blend together. (I used a hand held one.

Enjoy with chips.

Orange Teriyaki Beef and Noodles

This was seriously one of the easiest and yummiest things I've made in awhile! We substituted beef sirloin for ground beef so the kids could eat it a little easier and it was STILL really good. This recipe only makes 2 servings, so double it if you are making it for the family :)

1/2 lb beef boneless sirloin, cut into thin strips
1cup reduced-sodium beef broth
2tablespoons teriyaki stir-fry sauce
1tablespoon orange marmalade

Dash of ground red pepper (cayenne)
3/4cup sugar snap pea pods
3/4cup uncooked fine egg noodles (1 1/2 oz)

Heat 10-inch nonstick skillet over medium-high heat. Cook beef in skillet 2 to 4 minutes, stirring occasionally, until brown. Remove beef from skillet; keep warm.

Add broth, stir-fry sauce, marmalade and red pepper to skillet. Heat to boiling. Stir in pea pods and noodles; reduce heat to medium. Cover and cook about 5 minutes or until noodles are tender.

3.Stir in beef. Cook uncovered 2 to 3 minutes or until sauce is slightly thickened.

Philly Cheesesteaks


Super easy. 30 - minute (if that) meal that can be made for the "diet" people out there. Use olive oil in place of butter, low-fat or fat-free cheese and wheat hoagie buns.

1 lb. steak (you really can use any cut; since you're going to cut it up and season it heavily, there's really no need to splurge on a fillet mignon.)
2 Tbsp. butter
1 green bell pepper
1 medium yellow onion
Mushrooms (optional)
White cheese (mozzarella or Swiss or provolone)
Kosher salt and freshly-ground black pepper
4-6 Hoagie rolls

Slice bell peppers and onions. Set aside. Slice frozen meat. Set aside. Heat 2 Tbsp. butter over medium-high heat in a large skillet. Add steak and stir-fry. Season heavily with salt and lots of freshly-ground pepper. When meat is about half-cooked, add peppers and onions. Stir occasionally, cooking until most of the liquid is evaporated and meat is cooked through.

Slice buns and spoon steak mixture inside. Top with cheese and place under broiler for 1-2 minutes or until cheese is melted and bread is slightly toasty. Enjoy!
