Don't Have a FIRE???


In-Door SMORE'S

4 cups honey graham cereal
3 tablespoons margarine
6 cups miniature marshmallows
1/4 cup light corn syrup
1 1/2 cups milk chocolate chips

Coat a 9x13 inch dish with cooking spray. Place cereal into a large bowl; set aside.
In a medium saucepan over low heat, melt margarine. Add marshmallows and corn syrup and stir until melted and smooth. Stir in chocolate chips until melted. Remove from heat and pour over waiting cereal; stir well to coat. Press into prepared pan. Cool completely before cutting into squares.


Chocolate Pudding POPS


1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
2 cups cold milk
1 cup thawed COOL WHIP Whipped Topping

BEAT pudding mix and milk in medium bowl with whisk 2 min. Stir in COOL WHIP.
SPOON into 5 paper or plastic cups. Insert wooden pop stick or plastic spoon in center of each cup.
FREEZE 4 hours or until firm. Remove from cups before serving.
How to Remove Frozen Pops from Cups
Place bottoms of cups under warm running water for 15 sec. Press firmly on bottoms of cups to release pops. (Do not twist or pull pop sticks.)

Red Hot Raspberry Jello

Does anyone make Jello anymore?

I never do, but I have had these ingredients for a while so I decided to make it for a family party.

And guess what...only two servings left when we came home. Maybe we should all make Jello more often!

2 6oz. packages raspberry Jello
3.5 c. hot water
7-8 oz. Cinnamon Red Hot candies
3 c. applesauce

Put water and red hots in a pan on the stove and let them come to a boil. As soon as it boils, poor the hot water over the two packages of jello that you have placed in a bowl and stir until dissolved (about 3 minutes). Add the applesauce and stir. Pour into 9x13 pan and refrigerate until set. Cut into squares and serve topped with whipped cream.

Cornbread Salad


CORNBREAD SALAD

1 (1 oz.) pkg. Hidden Valley Ranch dry salad dressing mix
1 c. sour cream
1 c. mayonnaise
1 (9 inch) pan Tex-Mex or your own homemade cornbread, crumbled
2 (16 oz.) can pinto beans, drained
3 lg. tomatoes, chopped
1/2 c. chopped green pepper
1/2 c. chopped green onions
2 c. shredded cheddar cheese
10 slices bacon, cooked and crumbled
2 cans Del Monte whole kernel golden sweet corn, drained

Combine salad dressing mix, sour cream, and mayonnaise. Set aside. Place half of crumbled cornbread in the bottom of a large serving bowl. Top with half of beans. In a medium bowl, combine tomatoes, pepper, and onions: layer half of this mixture over beans. Layer half of cheese, bacon, corn, and reserved salad dressing. Repeat layers using remaining ingredients. Garnish as desired.
Cover and chill 2-3 hours before serving.
Yields 10-12 servings.

I used Honey cornbread for a more sweet taste, and I did not add green peppers.

Santa Fe Wraps

2 (8-ounce) packages cream cheese, softened
1 cup sour cream
1 (4 1/2-ounce) can chopped green chilies
1 (4 1/4-ounce) can chopped olives
1 cup (4-ounce) shredded pepper jack cheese
2 tablespoons salsa, plus salsa for dipping, optional
1/2 cup green onion tops, sliced
1 cup chopped fresh spinach
2 packages flour tortillas

In a large bowl, beat cream cheese until creamy. Then add sour cream, green chilies, olives, pepper jack cheese, salsa, and onion tops.

Beat at medium speed with an electric mixer. Stir in spinach. Spread mixture evenly over the surface of each tortilla. Roll up tortillas tightly and cut each tortilla crosswise into 6 slices.

Skewer each wrap with a wooden toothpick. Serve immediately or chill. Serve with salsa for dipping, if desired.

*Can be served with cooked, shredded chicken as well.

Minute Chocolate Mug Cake



1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
Some nuts (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again.Put your mug in the microwave and cook for 3 minutes on high. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to share!)

Baked Creamy Chicken Taquitos


1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges. Then roll it up as tight as you can. Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Dip'em in salsa, sour cream, guacamole. Makes approx. 16

Chocolate Chip Muffins


2 Cups Flour
½ Cup Sugar
1 Tbs Baking Powder
½ tsp Salt
1 Cup Milk
1/3 Cup Vegetable Oil
1 Large Egg
1 tsp Vanilla
1 Cup Chocolate Chips
Preheat oven to 400. Grease 12 standard size muffin cups or line with paper liners.
In a large bowl, mix flour, sugar, baking powder and salt.
In a medium bowl, mix milk, oil, egg and vanilla.
Make a well in center of flour mixture. Add the milk mixture all at once stirring just until mixed and dry ingredients are moistened. Stir in chocolate chips. Do not over mix. Spoon batter into prepared pan, about ¾ full. Bake muffins until tops are golden and firm, 17-20 minutes.
Makes about 1 dozen.

Handy Substitutions

I don't know about you but I always find myself flipping to the back of a cookbook trying to find an easy substitution for something when I suddenly find myself without rum. I mean baking powder. ;)

But now you don't have to search for a solution either. You can bookmark this page and the next time you need 1 cup of miniature marshmallows but only have 10 large ones, you'll know where to turn!


Baking Products
  • Baking powder, 1 tsp.: 1/2 tsp. cream of tartar + 1/4 tsp. baking soda
  • Semisweet chocolate, 1 oz.: 1 oz. unsweetened chocolate + 1 Tbsp. sugar
  • Unsweetened chocolate, 1 oz. or square: 3 Tbsp. unsweetened cocoa + 1 Tbsp. butter, margarine, shortening, or oil
  • Semisweet chocolate chips, 6 oz., melted: 2 oz. unsweetened chocolate, 2 Tbsp. shortening, + 1/2 c. sugar
  • Unsweetened cocoa, 1/4 c.: 1 oz. unsweetened chocolate (decrease fat in recipe by 1/2 Tbsp.)
  • Corn syrup, light, 1 c.: 1 c. sugar heated to a syrupy consistency with 1/4 c. water (GENIUS!!)

Orange Breakfast Drink



1/3 Cup Frozen Orange Juice Concentrate, thawed (½ of a 6 oz can)
1 Cup Vanilla Ice Cream, softened
1 Cup Milk
1 Tbsp Sugar
Place all ingredients in a blender, blend until smooth.

garlic chicken farfalle



GARLIC CHICKEN FARFALLE

16 oz. Farfalle pasta
1 c. heavy whipping cream (I used half and half as a lighter option)
3-4 chicken breasts (boneless, skinless)
2 to 3 cloves garlic,
1 Tbsp. pepper*
1/2 c. butter
1 lb. bacon, crumpled**
1/2 c. shredded Parmesan cheese
1 (12 oz) LawryĆ¢€™s mesquite marinade with lime juice

*Seems like a lot of pepper, but it has a wonderful flavor when everything mixes together. If you're apprehensive, do less pepper. You can always add more.

**We like to cook our bacon in the oven (400 degrees, convection). Way less messy. And it's crispy every time. Time varies, so you just have to watch it. I think it's usually around 30 minutes. Allow to cool and then crumple (I totally wear disposable gloves for this part - surprise, surprise).

[ directions ]

Crock pot chicken and bottle of marinade on low for 6 hours. Pull marinated chicken out of the juices, allow to cool a little bit, and shred (I pull it apart). Set this aside. About a half-hour before serving, boil the pasta. In a small saucepan, melt butter, add garlic, whipping cream, pepper, parmesan cheese, and crumpled bacon. Whisk together on low heat for 3-4 minutes. In a large bowl, pour over cooked, drained pasta, add chicken and stir through. Sprinkle a little bit more shredded parmesan cheese on top.

pretzel hugs

This is the easiest snack ever. And the kids will love to help. This was the first time that we used the waffle-style pretzels (instead of traditional). BIG hit. Much better.



PRETZEL HUGS

1 bag pretzels
1 pkg. M&Ms
1 pkg. Hershey "Hugs"

Place pretzels on baking stone or sheet. Place a Hug on each pretzel and bake at 200 degrees for about 8 minutes (just watch for the Hugs to melt). Remove from oven and promptly place a couple of M&Ms on each pretzel, pressing into the melted chocolate. Allow to cool before serving. At room temperature, this takes SEVERAL hours. I would recommend making these the day before you plan on eating. Or you can put them in the refrigerator to speed up the process.

Side note: You could also use Rolos in place of the hugs if you want to switch it up.

New Beef Stew

This took some time and effort, but was delicious in the end. Yet another Biggest Loser recipe!

What you need:

1 tablespoon whole grain flour
1/8 teaspoon garlic powder
1/8 teaspoon salt, plus more to taste
Pinch of ground black pepper, plus more to taste
1 pound top round steak, cut into 1" cubes (I used pre-cut stew meat)
2 teaspoons extra virgin olive oil
8 ounces button mushrooms, halved (I omitted these because I hate mushrooms)
1 chopped onion
1 tablespoon minced garlic
1 teaspoon dried thyme
28 ounces low sodium beef broth
2 large carrots, peeled and chopped
1 pound sweet potatoes, peeled and cut into 1" cubes

What to do:

In a medium resealable plastic bag, combine the flour, garlic powder, salt and pepper. Add the beef and shake the bag until all the cubes are coated. Refrigerate for at least 15 minutes.

Set a large nonstick soup pot over medium-high heat until it is hot enough for a spritz of water to sizzle on it. Add the oil. Add the reserved beef cubes to the pot in a single layer. Cook for about 1 minute per side or until browned. Reduce the heat to medium and add the mushroom, onion, garlic, and thyme. Cook, stirring occasionally with a wooden spoon and scraping any browned bits from the pan bottom, for about 10 minutes or until the onion is tender.

Add the broth and carrots. Increase the heat to high. When the broth comes to a boil, reduce the heat to low so the mixture simmers gently. Cover and cook for 45 minutes.

Add the potatoes. Cook for 45 minutes or until the beef is fork tender. Season with additional salt and pepper if desired and serve immediately!

Crispy BBQ chicken pizza snack

Another Biggest Loser recipe to the rescue! Quick, easy and incredibly delicious!

What you need:

1 whole wheat tortilla (8")
2 tablespoons barbecue sauce
1/2 cup finely shredded cheddar cheese
2/3 cup chopped chicken breast (I used Tyson's canned chicken because it's already ready to go!)
1/4 cup slivered red onion
1 and 1/2 teaspoons chopped fresh cilantro

What to do:

Preheat oven to 400 degrees.

Place the tortilla on a small nonstick baking sheet. Bake for 4-5 minutes per side or until crisp. Poke any air bubbles that may form with a fork. Remove from the oven. Top the tortilla evenly in layers with the sauce, cheese, chicken, onion and cliantro. Bake for 2 to 4 minutes or until the cheese is completely melted. Slice and serve immediately!

"Sexy Joes"

I recently acquired the Biggest Loser cookbook. I've been trying several different dishes and have yet to find one that I'm disappointed with. This is a healthy, but satisfying alternative to your everyday sloppy joes... and tastes better!

What you need:

1 pound extra lean ground turkey
1 tablespoon white vinegar
2 teaspoons Worcestershire sauce
1 and 1/2 teaspoons honey
1/2 teaspoon hot pepper sauce (I left it out because I'm not a big spicy fan)
2/3 cup chopped yellow onion
1/3 cup chopped green bell pepper
3/4 cup low sodium tomato sauce
3/4 cup chili sauce
1/4 teaspoon chili powder
Whole wheat buns

What to do:

Mist a medium nonstick skillet with olive oil spray and set it over medium-high heat. Add turkey. Cook, stirring with a wooden spoon, breaking into large chunks, for 4 to 6 minutes or until no longer pink.

Meanwhile, in a small bowl, combine vinegar, Worcestershire, honey and hot-pepper sauce. Whisk to blend and set aside.

Drain off any liquid that has accumulated in the pan. Add the onion, bell pepper, tomato sauce, chili sauce, chili powder and the reserved vinegar mixture to the pan. Stir to blend. Bring the mixture to a boil then reduce the heat so mixture simmers. Cook for 20 minutes or until the mixture is thickened.

Spoon over buns and serve immediately!

Braided Danish

I have had a few people ask me for my recipe for this danish. I had it on my personal blog a few weeks ago. I know it looks overwhelming with all of the ingredients and directions but really it's so worth it and trust me it doesn't take all that much time. The one I had pictured in my blog had different filling than this so you can alter to fit your taste. I have provided the apple filling here which is what the recipe really calls for.


Makes 2-1/2 pounds dough

Ingredients
For the dough (Detrempe)
1 ounce fresh yeast or 1 tablespoon active dry yeast
1/2 cup whole milk
1/3 cup sugarZest of 1 orange, finely grated
3/4 teaspoon ground cardamom
1-1/2 teaspoons vanilla extract
1/2 vanilla bean, split and scraped
2 large eggs, chilled
1/4 cup fresh orange juice
3-1/4 cups all-purpose flour
1 teaspoon salt

For the butter block (Beurrage)
1/2 pound (2 sticks) cold unsalted butter
1/4 cup all-purpose flour


DOUGH
Combine yeast and milk in the bowl of a mixer fitted with the paddle attachment and mix on low speed. Slowly add sugar, orange zest, cardamom, vanilla extract, vanilla seeds, eggs, and orange juice. Mix well. Change to the dough hook and add the salt with the flour, 1 cup at a time, increasing speed to medium as the flour is incorporated. Knead the dough for about 5 minutes, or until smooth. You may need to add a little more flour if it is sticky. Transfer dough to a lightly floured baking sheet and cover with plastic wrap. Refrigerate for 30 minutes.

BUTTER BLOCK
1. Combine butter and flour in the bowl of a mixer fitted with a paddle attachment and beat on medium speed for 1 minute. Scrape down the sides of the bowl and the paddle and then beat for 1 minute more, or until smooth and lump free. Set aside at room temperature.
2. After the detrempe has chilled 30 minutes, turn it out onto a lightly floured surface. Roll the dough into a rectangle approximately 18 x 13 inches and ¼ inch thick. The dough may be sticky, so keep dusting it lightly with flour. Spread the butter evenly over the center and right thirds of the dough. Fold the left edge of the detrempe to the right, covering half of the butter. Fold the right third of the rectangle over the center third. The first turn has now been completed. Mark the dough by poking it with your finger to keep track of your turns, or use a sticky and keep a tally. Place the dough on a baking sheet, wrap it in plastic wrap, and refrigerate for 30 minutes.
3. Place the dough lengthwise on a floured work surface. The open ends should be to your right and left. Roll the dough into another approximately 13 x 18 inch, ¼-inch-thick rectangle. Again, fold the left third of the rectangle over the center third and the right third over the center third. No additional butter will be added as it is already in the dough. The second turn has now been completed. Refrigerate the dough for 30 minutes
.4. Roll out, turn, and refrigerate the dough two more times, for a total of four single turns. Make sure you are keeping track of your turns. Refrigerate the dough after the final turn for at least 5 hours or overnight. The Danish dough is now ready to be used. If you will not be using the dough within 24 hours, freeze it. To do this, roll the dough out to about 1 inch in thickness, wrap tightly in plastic wrap, and freeze. Defrost the dough slowly in the refrigerator for easiest handling. Danish dough will keep in the freezer for up to 1 month.


APPLE FILLING
Makes enough for two braids
Ingredients
4 Fuji or other apples, peeled, cored, and cut into ¼-inch pieces
1/2 cup sugar
1 tsp. ground cinnamon
1/2 vanilla bean, split and scraped
1/4 cup fresh lemon juice
4 tablespoons unsalted butter

Toss all ingredients except butter in a large bowl. Melt the butter in a sautĆ© pan over medium heat until slightly nutty in color, about 6 - 8 minutes. Then add the apple mixture and sautĆ© until apples are softened and caramelized, 10 to 15 minutes. If you’ve chosen Fujis, the apples will be caramelized, but have still retained their shape. Pour the cooked apples onto a baking sheet to cool completely before forming the braid. (If making ahead, cool to room temperature, seal, and refrigerate.) They will cool faster when spread in a thin layer over the surface of the sheet. After they have cooled, the filling can be stored in the refrigerator for up to 3 days. Left over filling can be used as an ice cream topping, for muffins, cheesecake, or other pastries.

DANISH BRAID
Makes enough for 2 large braids
Ingredients
1 recipe Danish Dough
2 cups apple filling, jam, or preserves

For the egg wash:
1 large egg, plus 1 large egg yolk
1. Line a baking sheet with a silicone mat or parchment paper. On a lightly floured surface, roll the Danish Dough into a 15 x 20-inch rectangle, ¼ inch thick. If the dough seems elastic and shrinks back when rolled, let it rest for a few minutes, then roll again. Place the dough on the baking sheet.
2. Along one long side of the pastry make parallel, 5-inch-long cuts with a knife or rolling pastry wheel, each about 1 inch apart. Repeat on the opposite side, making sure to line up the cuts with those you’ve already made.
3. Spoon the filling you’ve chosen to fill your braid down the center of the rectangle. Starting with the top and bottom “flaps”, fold the top flap down over the filling to cover. Next, fold the bottom “flap” up to cover filling. This helps keep the braid neat and helps to hold in the filling. Now begin folding the cut side strips of dough over the filling, alternating first left, then right, left, right, until finished. Trim any excess dough and tuck in the ends.


Egg Wash
Whisk together the whole egg and yolk in a bowl and with a pastry brush, lightly coat the braid.

Proofing and Baking
1. Spray cooking oil (Pam…) onto a piece of plastic wrap, and place over the braid. Proof at room temperature or, if possible, in a controlled 90 degree F environment for about 2 hours, or until doubled in volume and light to the touch.
2. Near the end of proofing, preheat oven to 400 degrees F. Position a rack in the center of the oven.
3. Bake for 10 minutes, then rotate the pan so that the side of the braid previously in the back of the oven is now in the front. Lower the oven temperature to 350 degrees F, and bake about 15-20 minutes (Mine was overdone after 12 min.) more, or until golden brown. Cool and serve the braid either still warm from the oven or at room temperature. The cooled braid can be wrapped airtight and stored in the refrigerator for up to 2 days, or freeze for 1 month.

Brown Sugar Glaze
Combine in a saucepan over medium heat:
1 cup brown sugar
1/4 cup butter
1/4 cup cream

Bring this to a boil and let it boil for 1 minute. Remove from heat and let cool for 10 minutes. Meanwhile place in the bowl of a mixer:
1/2 cup sifted powdered sugar
1 tsp vanilla

Add warm brown sugar mixture to bowl and beat for a few minutes. Add a little more cream for desired consistency. Drizzle over danish! Enjoy!

Strawberry Apple Crepes

These took a bit of time and effort, but were totally worth it! The yummiest thing I've eaten in quite some time!! I cut the filling recipe in half because otherwise it will make a TON. Even cutting it in half, we ended up not using some of it... so prepare that portion as you see fit.

Crepes:

1 cup flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter

Whisk together flour and eggs in a large mixing bowl. Gradually add milk and water, stirring to combine. Add salt and butter; beat until smooth.

Heat a lightly oiled griddle or frying pan over medium-high heat. For each crepe, pour or scoop 1/4 cup onto the griddle tilting the pan with a circular motion to coat the surface evenly. Cook for about 2 minutes or until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

Strawberry Apple filling/topping:

2 pounds sliced strawberries
3 medium apples, peeled and diced
1/4 cup orange juice
2 tablespoons cornstarch
1/2 cup water
2 tablespoons butter
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
**optional: whipped cream and walnuts for topping

Combine strawberries and apples in a bowl and set aside.

In another bowl, combine orange juice, cornstarch and water, stirring until blended.

In a 4 quart saucepan, melt butter, then stir in sugar. Add cornstarch mixture and heat while stirring constantly, over medium-high heat until hot. Add 3 cups of the strawberry-apple mixture and bring to a simmer. Reduce heat and cook until thickened. Remove from the heat and stir in vanilla and almond extract; set aside.

Place 2 tablespoons of the warm fruit mixture in the center of each crepe, folding like that of a burrito.

Add the remaining strawberries and apples to the fruit mixture and stir, but do not cook. Spoon the fruit mixture a top your crepes and top with whip cream. Drizzle with sauce and sprinkle with walnuts if you choose. Serve immediately!

Philly Steak Sandwiches


Yummy Yummy Philly Steak Sandwiches!!!!!!!!!!!

These are a hit, enjoy
1 Chuck Roast
1 Packet of A Jus Sauce
6 Slices of Swiss Cheese
1 Loaf of french bread
2 Tomatoes (sliced)
1 bell pepper (sliced)
1/2 onion (sliced)


Place 3 cups of water in Crock pot, add A jus Sauce mix. Place roast in Crock pot and cook on low for 6-8 hours. One hour before done time add onions and pepper and shred roast.

Once complete use slotted spoon and layer bread with mayo, meat mixture, slices of Swiss cheese and tomatoes. Place in oven on cookie sheet until toasted and cheese is melted. Save the juices from the Crock Pot for dipping. Now EAT!

Chicken Party Rolls

3 oz Cream Cheese, softened
2 Cup Chicken, cooked & cubed
1 4oz Can Chopped Mushrooms
2 pkg Crescent rolls (8 in each pkg)
Lay out crescent rolls. Mix other ingredients. Put about a Tbsp on each roll and roll into a ball. Roll balls in cornflake crumbs or dressing mix.
Bake at 375 for about 20 minutes. Serve with cream of mushroom sauce.

Cream of mushroom sauce
1 Can Cream of Mushroom Soup
1 Cup Milk
Mix and heat

Basic Baked Scones

Ingredients:

1/3 C real butter
1 ¾ C Flour
3T sugar
2/1/2 t baking powder
¼ t salt
1 egg, beaten
4-6 T milk

Heat oven to 400 degrees.

Mix flour, sugar, baking powder, and salt. Cut in butter with pastry blender until it resembles fine crumbs.

Combine egg and 4T milk. Slowly pour milk mixture into dry mixture while mixing with a fork to combine. If you need the additional 2 T milk to bring the dough together, add it. I almost always need the full 6T of milk.

Gently pat dough into a circle, about 1/2 inch thick. Brush top with milk or beaten egg and sprinkle liberally with sugar.

Cut into 6 wedges and separate on a cookie sheet. Bake 10-12 minutes. The tops shouldn’t be brown, but the bottoms will be golden-brown and the tops set. Keep an eye on them and don't over-bake. The easiest way to ruin a scone is to over cook it! Scones have different texture than a cake or muffin, so if they get over cooked they will be dry and crumbly

While still warm, split and spread with butter and jam, honey-butter, just about anything that sounds good to you! Or let them cool and use them for things like strawberry shortcake which I did....SO GOOD!

Hawaiian Turkey Burgers

The best part of this recipe is that it's just not super delicious, but it's super healthy as well--low in calories and fat and high in lean protein.



1 lb. lean ground turkey
1/2 c. (plus more if you need it) dry bread crumbs
1/2 c. red or green bell pepper, minced (about 1/2 medium bell pepper)
1/2 c. thinly sliced green onion
1 tsp. finely chopped fresh ginger root
1 small can pineapple slices; reserve juice
1/2 tsp. Kosher salt
Thick Teriyaki sauce (like Kikkoman )
Light mayonnaise (optional, but very yummy!)
Hamburger buns

Gently combine turkey, bread crumbs, bell pepper, green onion, ginger, 1/4 c. reserved juice from pineapple, and salt. Form into 4 deliciously large patties. Chill until ready to cook.

If you can, pop these puppies on the grill until done; otherwise, you could put these under the broiler in your oven, a grill pan on your stovetop, or just a frying pan. If desired, grill pineapple in last 5 minutes of cooking. Baste burgers with Teriyaki sauce during last two minutes of grilling. Spread buns with light mayonnaise and a little more Teriyaki sauce. Enjoy!

Asian Sesame Chicken and Broccoli


This is amazing! I had to omit the broccoli since I can't have it but oh man, I love it! It's easy too.

8 oz. angel hair pasta
2 cups small broccoli florets
1 lb. boneless skinless chicken breasts - cut into thin strips
3/4 c. Kraft Asian Toasted Sesame Dressing (on the salad dressing isle)
3 Tbsp. soy sauce
1/4 tsp. each: ginger, garlic powder, crushed red pepper
1/3 chopped dry roasted peanuts (optional)

Cook pasta according to package, adding broccoli to the boiling water for the last 3 minutes of the past cooking time.

Meanwhile, spray a large skillet with cooking spray and cook the chicken. Stir in dressing, soy sauce, ginger, garlic and red pepper.

Drain pasta and place in large bowl. Add chicken mixture and mix together (lightly). Sprinkle with peanuts and serve.

*Note* If you are nervous about the crushed red pepper flakes (which I am not, but I cut it back for my kids sake...), just add 1/8 of a tsp. starting out. You can always add more after the fact...

Muddy Buddies


9 Cups Chex
1 Cup Semi Sweet Chocolate Chips
½ Cup Peanut Butter
¼ Cup Butter
1 tea Vanilla
1 ½ Cups Powdered Sugar
Pour Chex into large bowl, set aside. In medium microwave safe bowl melt butter, chocolate chips and peanut butter on high 1-1½ minutes or until smooth, stirring after 1 minute. Stir in vanilla. Pour chocolate over Chex, stir until coated. Pour into a large resealable bag with powdered sugar. Seal securely and shake until all pieces are coated. Spread on wax paper to cool.

Molten Chocolate Cakes

Perfect for Valentines!

4 squares Baker's Semi-Sweet Baking Chocolate
1/2 cup butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour
1/2 cup Cool Whip Whipped Topping, thawed

Preheat oven to 425 F. Butter 4 (3/4 cup) custard cups of souffle dishes. Place on baking sheet.

Microwave chocolate and 1/2 cup butter in large microwavable bowl on HIGH 1 min. or until butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour. Divide batter between prepared custard cups.

Bake 13 to 14 min. or until sides are firm but centers are soft. Let stand 1 min. Carefully run small knife around cakes to loosen. Invert cakes onto dessert dishes. Top with Cool Whip and serve immediately.

*Batter can be made a day ahead. Pour into prepared custard cups, cover with plastic wrap and refrigerate. Bake as directed.

Pasta Fagioli Soup

1 lb Ground Beef
1 Cup Diced Onion
1 Cup Carrot, julienned
1 Cup Chopped Celery
2 Cans (14.5 oz) Diced Tomatoes
1 Can (15 oz) Red Kidney Beans, with liquid
1 Can (15 oz) Great Northern Beans
1 Can Tomato ( 15 oz) Sauce
1 Can (12 oz) V-8 Tomato Juice
1 Tbsp White Vinegar
1 ½ tsp Salt
1 tsp Oregano
1 tsp Basil
½ tsp Pepper
½ tsp Thyme
½ – 1 tsp Garlic Powder
½ lb (½) pkg Ditali Pasta
Brown ground beef in a large saucepan or pot, drain. Add onion, carrot and celery and saute for 10 minutes. Add remaining ingredients, except pasta, and simmer for about an hour. Meanwhile, cook pasta in a separate pan, just until slightly tough, drain. Add the pasta to soup Simmer for about 5-10 minutes, until pasta is tender.
